I wasn't aware folks could do this. If I'm reading this correctly, Rolex offers a service to verify the authenticity of your watch and provides you the documentation to back it up?

Only with the, bracelet, case and caliber..Many redone or replacement dial and hands have gotten past Rolex service. So one must be very careful in researching the dial when one buys a vintage watch, service papers or not.
