By 'early' in this context I mean 1930-40s Swiss movements.

I've been looking over LOTS of photos of old movements from these two companies and can't see any functional differences...in spite of the VAST difference in price.

Did Swiss standards at the time mean that major companies were compelled to use the same movements with only aesthetic differences?

Sure, but what is the difference between a 1940s Rolex pallet fork and an Omega pallet fork?

Or the difference in the mainspring, balance wheel, etc. etc.
You could ask that about any brand's pallet fork and you would get a reply of "not much" because of the basic design. Balance wheels differ in size and type, but that has as much to do with the era they're made and the corresponding size of the movement they're regulating. It's better to ask about specific movements than such a general question. Two different Rolex movements can have different balance wheels, hairsprings, mainsprings, etc.
